Perennial growing to 180cm. Thistle-like plants with silver/grey/green leaves. Large green flowers heads are eaten as a vegetable. Large hearts. Gourmet vegetable. Can be grown as an ornamental. Flowers can be dried and used in arrangements. The most common Australian variety.

Green Artichoke
By: Charlie on 8 October 2016I planted 5 plants last Summer all did very well but did not produce any Artichoke til just this October 2016. The plants didn't die back but grew through the Winter months ( I live in the West of Melbourne) and now stand around 1.2 metres tall. I have now already picked 7 nice Artichokes and the plants still have plenty more.

By: Nathan Kilah on 10 May 2016The seeds germinated well. In future I would plant directly in the ground as they grow a vigourous tap root that quickly outgrew the long tube starting pot. They have been very popular in the garden, and needed protection from slugs/snails, and more recently aphid and white fly. We have eaten one flower and it was very nice.
