Heirloom Spanish green onion variety with long white stem. Calcot onions take over a year to grow and are produced by using a specific growing technique. 10 months after planting seed harvest entire onions and store them in a cool dark place until Autumn when they begin to shoot again. Re-plant the shooting onions by lying the onions down in trenches and covering with dirt to just above the root. As the onions grow continue covering the onion stem with dirt. This extends the onion root and keeps it white in colour. Once 10-15cm of the onion root is covered leave them to fully develop and harvest entire onion once its about 25cm long. Traditionally these onions are cooked by grilling them whole (still covered with dirt) and peeling off the charcoal outer leaves leaving the mild and tender juicy onion stalk.
