This variety of Amaranth is best used as a leaf vegetable, salad green, sprout or microgreen. It has tender green/red leaves with red veins that are sweet in flavour and very popular in Asian cuisine; excellent in soups, stews and stir-fries. Fast growing. Very nutritious. Heat tolerant. Pick leaves as required or harvest whole plant at maturity. Is sometimes grown as an ornamental. Also known as "Vegetable Amaranth"

Amaranth- Red Leaf
These are a great salad amaranth, lovely tender leaves. They sprout quickly but do take a while to mature past the 'microgreen' stage. They self-seed incredibly if you let them go to flower, these seeds are an investment that you can keep going for a very long time!
