This variety of Amaranth is most commonly grown as a leaf vegetable; it's fantastic for baby leaf, salad greens, sprouts or microgreens. The plants produce large green leaves that have excellent flavour and tender texture. Very popular in Asian cuisine; excellent in soups, stews, salads and stir-fries. Fast growing. Very nutritious. Heat tolerant. Pick leaves as required. Plants do well in hot weather. Young leaves are tender and used as a salad green, mature leaves are cooked like spinach. Seeds can also be harvested from mature plants and used as a grain.
Sprouts are ready in approximately 5-10 days.
Microgreens are ready in approximately 14-21 days.
Baby leaves are ready in approximately 20-30 days.
Plants reach maturity at approximately 70-110 days.
