Perennial growing to 100cm. Thistle-like plants with silver/grey leaves. Produces medium to large green/purple flowers heads which are eaten as a vegetable. Italian heirloom variety, very popular with chefs as they are more tender than other varieties. Can be grown as an ornamental. Flowers can be dried and used in arrangements.
