Perennial vegetable producing long thin black tapered roots that grow to 30cm long. Roots have a black skin and white flesh. Young shoots and flower buds are also edible. Roots can be harvested in the first year or when they are more mature in their second year. Flavour is similar to asparagus and oysters. Great for soups, stews or eaten alone. Can be baked, fried or steamed. Is best suited to cooler climates. Also known as "Scorzonera", "Spanish salsify", "Black Oyster plant" or "Viper's grass".
