Egyptian Spinach
Corchorus olitorius
- Ancient Egyptian vegetable
- Also known as "Molokhia"
Ancient Egyptian plant with nutritious green leaves which are used as a vegetable and are popular in Middle Eastern cuisine. Older leaves can be cooked similar to spinach and used in stews and soups. Once cooked the leaves release a jelly-like slimy substance which is often used as a natural thickener. Young leaves can be eaten fresh and are often used in salads. Good hot-climate alternative to spinach. Stems of this plant are used to produce Jute and it is often grown as a commercial fibre crop. Also known as "Molokhia" or "Jute Mallow".
