Large broad-leaf Mediterranean variety which forms a head and looks similar in appearance to lettuce. Commonly used raw as a salad green but can be eaten cooked in stir-fries, soups or stews. Broad-leaf varieties are often less bitter than fine-leaf endive varieties. Also known as "Escarole".
