When to Harvest When the fruit is a large size and changes colour slightly, the rind is hard to dent with a fingernail and the fruit stems are dry. Leave fruit to mature for 20 days after picking before harvesting seeds.
How to Harvest

Cut fruit in half and scoop out the seeds, separating them from the pulp as much as possible.

How to Clean

Rinse seeds thoroughly to separate them from the pulp, then spread them on a screen or plate to dry.

May cross-pollinate with other Cucurbita maxima plants including some varieties of pumpkin and winter squash. Harvested seeds can be soaked for several hours to help separate them from the pulp.
