Description

Jerusalem Artichoke (Tuber)

Helianthus tuberosus

NOT TO NT, TAS, WA

  • Sweet nutty flavour
  • Potato substitute
  • Highly productive

Also known as Earth Apple or Sunchoke, Jerusalem Artichoke is a highly productive crop with delicious tubers that can be used to make soup, roasted or mashed. The fleshy tubers are sometimes used as a substitute for potatoes but with a sweeter, nuttier flavour.

The plant is a tall sunflower relative with bright yellow flowers that grows quickly and requires little maintenance. A perennial, Jerusalem Artichoke grows year-round in warm areas; in cooler climates it will die down and reshoot in spring. Tubers can be harvested 4-6 weeks after flowering.

Each tuber will produce a dozen or more edible tubers.

Note: We supply tubers with at least two viable growth points; large tubers may be cut (similar to cutting a large clump of ginger) but pieces supplied will be large enough to grow new plants.

How To Grow

Plant soon after delivery. Tubers can be stored short-term in damp sawdust or potting mix in a well-ventilated place.

  1. Choose a location in full sun with well drained soil where tubers will have space to multiply.
  2. Dig over soil to loosen it; Jerusalem artichokes can be grown in sandy soil.
  3. Plant in late winter or spring.
  4. Space tubers 30cm apart.
  5. Plant tubers 10cm deep, cover with soil and water in well.
  6. Jerusalem artichokes are fast growing and benefit from regular applications of compost or fertilizer.
  7. Harvest 4-6 weeks after flowering in autumn or when stems have died back.
  8. Small tubers can be left in the ground to grow the following year.
